This is what I call quick comfort food. I can remember growing up in Russell NY and going to Knox Memorial High School and the cafeteria staff would make this for us once a week. I can also remember my grandmother making this dish as well, usually in the colder months.

Ingredients

  1. 1 to 2 pounds of ground beef
  2. 1 1/2 to 2 pounds of peeled potatoes
  3. 1 sweet onion diced up
  4. Beef broth
  5. Vegtables ( peas, corn, and diced carrots)
  6. 1 stick of butter
  7. Pinch of salt and pepper

We will start off by putting our onions, vegetables, and some 3 to 4 tablespoons of butter into a saucepan. Start with the onions, and if your diced carrots and peas are already cooked, add them in last as not to overcook them. While they are Sautéing, quarter the potatoes and place them in boiling water for about 20 minutes.

Add the ground beef to the sauteing vegetables and cook thoroughly and drain the excess juices. Add in the beef broth and reduce the amount of heat from the stove to low so it can simmer for a while. The potatoes once done can be mashed with 4 tablespoons of butter. Take a 9 x 13-inch casserole dish and put the beef and vegetables on the bottom evenly. Take your mashed potatoes and smear them on top of the meat and vegetables.

Preheat the oven to 375 to 400 and place the uncovered dish in for around 20 minutes. It is not ready to be served.
